- Bacon400 g
- Lentil2 cup
- Sugar1 cup
- Wheat flour2 cup
- Black pepper to taste
- Salt to taste
- Oil for frying onion to taste
- Bring the lentils to a boil with a little water and salt, cook until al dente and reserve with the cooking water. In another pan, sauté 1 onion and the bacon cut into cubes until the onion is very dark, that's how it is, that helps to give color to the dish. Place the rice, the lentils with the cooking water and complete with hot water until the rice is covered 2 fingers above, adjust the salt and pepper to your taste and let it cook until the rice is fully cooked.
- For the fried onion, take the 5 onions, cut them into half moons (as in the photo) or slices, add the sugar, mix well and leave in a colander for about 30 minutes to dehydrate. After that time, squeeze the onions by hand and coat them in the wheat flour, but before frying, pass the breaded onions in a sieve to remove the excess flour. Fry by immersion in hot oil, once golden, place on a paper towel lined container.
