- Arboreal Rice2 cup
- Mushrooms200 g
- Onion1/2 unit(s)
- Garlic Clove3 unit(s)
- White wine1/2 cup
- Grated Parmesan Cheese100 g
- Margarine4 tablespoon
- Olive Oil, Salt and Black Pepper to taste
- Vegetable broth600 ml
- Sicilian lemon2 unit(s)
- First remove the zest from the lemon and then remove the juice and set aside. In a pan put a thread of olive oil and add the crushed garlic and the onion cut into cubes, to brown. Add the rice and mix. Add the wine and let it evaporate for 1 minute.
- Gradually add the hot vegetable broth to the rice to cook. When the rice is al dente, add the mushrooms and mix well. Put the salt and pepper of the kingdom, lemon juice and mix.
- When the rice is fully cooked, add the lemon zest and mix well. Put the grated cheese and margarine and mix. Then you can serve and if you want you can put some lemon zest on top.
