- Wash and peel the carrots. Place the whole carrots on a baking sheet, put a drizzle of olive oil on each one and bake for 20 minutes (200°).
- Remove the carrots and cut in half lengthwise. Season with salt, pepper and seasonings to taste. I added spicy paprika, curry powder and a touch of nutmeg. It is important to season well and distribute the seasonings along the entire length of the carrot.
- Return to the oven and bake for another 20 minutes (200°), taking half the time to turn!
