- Rosemary to taste
- Thyme to taste
- Smoked Paprika to taste
- Cayenne Pepper to taste
- Salt to taste
- Sweet Paprika to taste
- Black Pepper to taste
- Nutmeg to taste
- Wheat Flour20 g
- Butter20 g
- Whole Milk400 ml
- Cheddar Cheese200 g
- Parsley to taste
- Olive oil to taste
- Make Mise en place and book;
- Start by washing the potatoes and cutting them into a canoe shape;
- Cook the potatoes in a pan with water and salt until they are al dent;
- Arrange in a stainless steel mold, season with olive oil, sweet paprika, smoked paprika, cayenne pepper, salt, rosemary and thyme
- Bake in a preheated oven at 190°c until golden, crispy on the outside and soft on the inside.
- In a pan, melt the butter, and add the wheat flour to make a roux blanc;
- Add the milk and stir until it reaches nape point;
- Season the sauce with salt, pepper and nutmeg;
- Add the cheddar cheese to the sauce and adjust the seasoning if necessary;
- Arrange the rustic potatoes on a plate and put the sauce on top, finish with chopped parsley
