- Salt and pepper for seasoning to taste
- Preheat the oven to 200°C.
- Wash and dry the potatoes and herbs.
- Cut the potatoes in half and then into 3 or 4 pieces. Always lengthwise.
- Place the potatoes in a pot of water and season with a teaspoon of salt.
- Bring to a boil over high heat and, when the water starts to boil, cook for 6 minutes.
- Remove the potatoes from the heat and place them in a sieve to drain the water well. If necessary, dry them with a paper towel.
- Transfer to a non-stick roast, gather the herbs, unpeeled garlic cloves and drizzle with the olive oil.
- Mix the oil well with the potatoes and herbs. The ideal is to leave the herbs well moistened with olive oil so that they do not burn.
- Spread the potatoes on the baking sheet without touching or overlapping. This helps to make them more golden and crispy!
- Season with salt and pepper to taste.
- Place in the preheated oven to bake for about 40 minutes.
- Shake the pan every 10 minutes or turn the pieces with tongs.
- Remove from the oven, and if necessary, loosen the potatoes from the roasting pan with a spatula. Serve immediately.
