  • Salt, coriander, oregano, chumichuri, basil, bay leaf, paprika, zattar, curry, cumin and black pepper0 to taste

  • Pork giblets1 unit(s)
  1. Cook the giblets with vinegar, oregano and bay leaf. As soon as it boils, turn off the heat, wash well, chop and reserve.
  2. In a pan fry the bacon, pepperoni, onion, garlic, place the chopped giblets, peppers, chumichuri, oregano, paprika, bay leaf, curry, zattar, black pepper, chopped chili pepper, basil, cumin and salt, stir everything until all seasonings are incorporated.
  3. Cover with water and let it cook until the water starts to dry, then add the tomatoes, cilantro and let it all incorporate.
