- Diced Bacon1/4 cup
- Lard3 tablespoon
- Biju corn flour2 cup
- grated carrot1/2 cup
- Onion cut into half moons1/3 cup
- Chopped Chili Pepper to taste
- Sea Salt to taste
- Coarsely chopped parsley to taste
- In a pan heat the lard and fry the bacon for 2 minutes.
- Add the onion and pepper and fry until it wilts well.
- Add the carrots and continue to fry over low heat for another 5 minutes.
- Add the parsley and mix for another 1 minute.
- Add the corn flour, seasoning with salt and stir over low heat until the flour is toasted.
- Transfer the farofa to another container and serve when it is cold.
