- and 1/2 unwashed raw rice2 cup
- Leftover shredded roast chicken2 cup
- water700 ml
- Chicken broth tablet dissolved in 100ml of boiling water1 unit(s)
- grated carrot1 unit(s)
- Corn1 can(s)
- Chopped Onion1 unit(s)
- minced garlic cloves4 unit(s)
- Olive oil5 tablespoon
- Saffron1/2 tablespoon
- Bay leaf1 unit(s)
- Salt to taste
- Seasonings to taste
- In a medium saucepan, add the oil and sauté the garlic until golden.
- Add the onion and sauté another minute.
- Add the rice and sauté a little more
- Add the onion, corn, saffron, seasonings to taste and shredded chicken and stir some more.
- Add water and dissolved chicken stock.
- Add salt to taste and stir
- Add the bay leaf and cover until cooked.
- Stir the rice. It's really juicy.
- Pour on a platter if you prefer, add parsley and chives if you want and serve warm.
