- I left the beans to soak for 1 hour, in the pressure cooker I fried the bacon and the pepperoni over low heat, I did not add oil, I used the meat fat itself, added the ribs, with the already fried meats I added the garlic and let it brown, I added the onion, salt and pepper. I added water and cooked for 20 minutes.
- After that time, I removed the pressure and added the drained beans, a little more water, covered the pan and cooked for another 15 minutes. I removed the pressure and left it in the fire until the broth was clear, finished with green smell.
- In a pan, I fried the chopped bacon and chopped pepperoni, added the cassava flour, seasoned with saffron, salt and pepper, stirred well until the farofa was very crispy.
- I chopped the cabbage leaves very thinly and sautéed them in olive oil with minced garlic, seasoned with salt and pepper.
