- Fresh Basil250 g
- Olive oil100 ml
- Squeezed Sicilian Lemon1 unit(s)
- Garlic Clove1 unit(s)
- Grated Parmesan Cheese2 tablespoon
- Nuts50 g
- Salt and pepper1 to taste
- Spaghetti400 g
- Burrata1 unit(s)
- Pistachios2 tablespoon
- Boil the basil for 3 minutes. Drain and reserve.
- Cook the noodles according to package specifications (usually 10-11 minutes.
- While the pasta is cooking prepare the pesto: In a food processor or blender, add the basil, olive oil, squeezed lemon, Parmesan, walnuts, garlic, salt and pepper. Pulse for 2-3 minutes until you get a smooth, grainy consistency.
- Drain the pasta and transfer to a platter. Add the pesto and mix well. Then serve with burrata, split with your hands and sprinkled with pistachios.
