- 1 eggplant - medium1 unit(s)
- Ground beef200 g
- 2 slices of mozzarella cheese2 unit(s)
- 1 garlic clove1 unit(s)
- 1/2 onion1 unit(s)
- Cut the eggplant in half, remove the flesh and set aside.
- Saute ground beef with onion and garlic.
- Season with your favorite dry seasonings. I used cumin, smoked lemon pepper and coloral.
- The eggplant pulp that we took cut into cubes and take it to cook with the meat. You can add a little water and tomato paste.
- After the meat is cooked, stuff the eggplants, place the slices of cheese on top and a pinch of oregano on top if you like.
- Bake for 15 to 20 minutes or until browned.
- Serve with rice and salad.
