- medium eggplants3 unit(s)
- Chopped tomato2 unit(s)
- Chopped Onion1 unit(s)
- Olive2 tablespoon
- Salt, pepper, green smell to taste
- Minced Garlic Cloves2 unit(s)
- Cooked ground beef300 g
- Mozzarella Cheese100 g
- With the eggplant lying down, cut it in half horizontally;
- In a pan with water and salt, and cook the eggplants until they are slightly soft;
- Remove from heat and remove the eggplant pulp;
- In a pan, sauté the onion, garlic and the chopped eggplant pulp in olive oil.
- When golden add the cooked ground beef and tomato and let it cook, add salt, pepper, green smell to taste,
- Arrange the cooked eggplants on a baking sheet greased with olive oil, season with a little salt and pepper;
- Place the stuffing in the middle of the cut eggplants; cover with the mozzarella cheese;
- Bake in a preheated oven until the mozzarella melts.
