- Tomato2 unit(s)
- Cream cheese100 g
- Chives5 g
- Ham50 g
- Parsley5 g
- Salt to taste
- Black pepper to taste
- Extra Virgin Olive Oil to taste
- Cut the eggplant in half and make cuts inside, without tearing the skin. Season with salt, oil and pepper.
- Place the eggplants on a baking sheet and place in a preheated oven at 180c for 20 minutes.
- Cut the tomato into cubes and the ham too
- Cut the eggplant to your liking, and remove the pulp. Mix it with all the ingredients and stuff the eggplants.
- Finish with parsley.
