- In a bowl, separate the whites from the yolk and reserve the separate yolks.
- Add in the whites, seasonings to taste. I used salt, a pinch of paprika and oregano.
- Whip the egg whites until frothy and set aside
- In another bowl prepare your stuffing, I used kitut but it can be sardines, chicken, ground beef, whatever you want. I kneaded the kitut, added the finely chopped tomato and cilantro.
- Mix well and set aside.
- Take the snow whites and add only 1 yolk that you left separate at the beginning.
- Gently mix.
- In a frying pan with hot oil, spread the egg whites.
- Wait until a crust forms around
- Add your stuffing and cover with the other part making it like a tapioca or pastel.
- Squeeze a little and leave it for a few seconds and our stuffed omelet is ready.
- Serve with rice.
