- Washed and brushed large potatoes4 unit(s)
- Sliced Bacon200 g
- Thinly sliced small onions2 unit(s)
- Butter25 g
- Milk100 ml
- Grated Parmesan Cheese75 g
- Chopped Parsley2 tablespoon
- Salt and pepper to taste1 teaspoon
- Preheat the oven to 200ºC. Pierce the potatoes with a fork, put them in the oven and bake for 45 minutes or until tender. Remove them from the oven and lower the temperature to 180ºC. Meanwhile, heat a skillet and fry the bacon slices for 2 or 3 minutes, add the onion and fry for another 1 minute. Cut the 1/3 of the potato lid horizontally. With a spoon, remove the pulp from the potato and place it in a bowl. (be careful when holding it, so as not to break it) Reserve the hollow potatoes, placing them on a greased baking sheet. Crush the pulp with a fork. Add the butter, milk and beat until you get a smooth puree. Add the grated cheese and bacon with the onion and season to taste. With a spoon, return the mixture to the potato skins and bake them for 20 to 25 minutes until the surface is golden. Sprinkle with the parsley and serve while still hot.
