- Thinly sliced red onion1/2 kg

- White Vinegar1/2 cup
- Beets, peeled and cut into 3 pieces1/2 unit(s)

- Salt1 teaspoon
- Demerara sugar1//2 cup
- White peppercorns1 tablespoon
- Seedless Girl's Finger Pepper1/2 unit(s)
- Cinnamon stick1 unit(s)
- Put the water to heat. When it boils, reserve a cup and the rest pour into the sliced onion. Leave for 5 minutes and drain. For marinade: Take the reserved cup of water and put it in a pan, put it on the fire. Add the vinegar, sugar, salt, bay leaf, girl's finger pepper, cinnamon and white peppercorns. Leave on the fire until the sugar dissolves. Turn off the heat and let it cool. Take a very clean glass container and intersperse the onion and beetroot pieces and the marinade. Cover well and let it cool and put it in the fridge. This onion lasts for up to 6 months.
