- Clove handful1 to taste

- Black Pepper to taste
- Dry white wine1/2 teaspoon
- Pineapple broth1/3 g

- In a blender, blend 1/3 of the pineapple with 200 ml of water, strain and reserve the juice
- Then cut the rest of the pineapple into slices and line a baking sheet or mold with them.
- Wash the tenderloin and dry with a paper towel
- With the help of a very sharp knife, make cuts (not too deep) in the ham forming diamonds.
- In a container mix the mustard, molasses, salt and black pepper and pass this mixture through the tender, leaving it smeared.
- Then, place cloves on all the ends of the lozenges you cut.
- Place the tenderloin in the mold over the pineapple slices and add the pineapple juice that has been blended with wine.
- Take to bake in medium oven for approximately 30 minutes, or until it is lightly golden.
- Remove from the oven and slice the tenderloin and arrange on a tray with the roasted pineapple slices.
- Serve with fresh rice
