- Garlic Head1 unit(s)
- Leek1 unit(s)
- Thyme to taste
- Salt and Black Pepper to taste
- Vegetable broth1 l
- Cut the tomatoes into small pieces
- Sauté the onion, garlic and leek over low heat until caramelized.
- Increase the heat and add the tomatoes, sauté well and cover with the vegetable stock and thyme.
- Lower the heat to as low as you can, (turning the stove knob to maximum until almost off the flame is lower than minimum)
- Let it reduce until almost all the broth dries up, stirring occasionally.
- Adjust salt and pepper
