- Plant milk (I used chestnut milk)500 ml
- Corn starch2 tablespoon
- Onion1 unit(s)
- Garlic Cloves2 unit(s)
- Olive oil to taste
- Black pepper to taste
- Salt to taste
- Nutmeg1 teaspoon
- Dissolve the cornstarch with a little of the milk to prevent lumps from forming. Reserve.
- In a deep pan, sauté the onion and the finely chopped OJ in olive oil (or butter, if part of your diet).
- Add the chestnut milk and diluted starch.
- Season with nutmeg (freshly grated or powdered), salt and pepper.
- Cook for between 5 and 10 minutes, until thickened, stirring occasionally to prevent lumps.
- If it's too runny for your taste, reduce it longer or add a little more diluted starch.
- If it gets too thick, add more liquid (remembering to adjust the salt so it doesn't get "watery").
- If you eat cheese, this sauce is even better with a little grated Parmesan cheese at the end.
