- Eggplant750 g
- Chopped skinless tomatoes500 g
- Minced Garlic Cloves5 unit(s)
- Tomato Extract1 tablespoon
- Smoked paprika1/2 tablespoon
- Cumin1 teaspoon
- Pomegranate molasses or lemon juice1 tablespoon
- Chopped parsley2 tablespoon
- Chopped coriander1 tablespoon
- Salt to taste
- Olive oil to taste
- Start by placing the eggplants on the stove until they are fully charred. Turn off the heat, place the eggplants in a bowl and cover with a cloth. After 10 minutes transfer the eggplants to a cutting board and remove the pulp carefully so as not to burn yourself. Reserve.
- In a deep skillet, heat the oil and add the garlic. Let it fry until golden and add the tomatoes and spices. Let the tomatoes wilt and add the extract. Stir well to incorporate the ingredients.
- Then add the eggplant pulp and mix well. Add the salt, pomegranate molasses, turn off the heat and finish with the parsley and cilantro.
- Serve with bread or as an accompaniment to a meal.
