- Pre-heat the oven at 180 °.
- Slice the zucchinis using a knife or mandolin. Sprinkle with salt, wait 10 minutes for them to transpire and then dry the droplets with a paper towel.
- mix the ricotta cream and parmesan.
- to assemble the ravioli, use two slices arranged as a cross. Fill the center with about 1 level tablespoon of the cream cheese and then seal the ends as if in an envelope.
