- Salted, shredded and cooked codfish200 g
- Straw potato100 g
- Onion1/2 unit(s)
- Garlic1 unit(s)
- Bay leaf1 unit(s)
- Salt to taste
- Black pepper to taste
- Parsley or coriander to taste
- Eggs3 unit(s)
- Extra virgin olive oil3 tablespoon
- Olives to taste
- Leave the cod to soak overnight. Drain the water.
- Cook the codfish with water until covered. You can use milk for cooking.
- Drain the water or milk. Let it cool and shred. Removing skins and pimples.
- Cut the onion into rings and sauté in oil. When cooked, add chopped garlic and bay leaf. Next, add the cod. Sauté everything and remove from heat.
- Beat the eggs and add to the hot stew and stir everything. Eggs should be hard-boiled but creamy.
- Add the straw potato, mixing well. And finish with the olives and green seasoning of choice.
