- Cut your cod into medium pieces and set aside. Cut all the other ingredients into thin slices. In a bowl place the cod and all the other ingredients, drizzle with olive oil (to taste). Transfer to a roast, cover with aluminum foil and take it to the oven preheated to 200c, after 30min in the oven remove the foil and leave it for another 30min so that the cod and the potatoes give a light golden color. If your cod is not at the right point, leave it in the oven for a little longer, as the time may vary from oven to oven.
