- I sautéed the cabotia with garlic and seasonings, after it was cooked I kneaded it and let it "thick". Shrimp sautéed in olive oil with garlic, onion, saffron and seasonings. I put chopped tomato, tomato extract, and let it thicken. In a refractory with a thread of olive oil, I put the cabotia puree, shrimp sauce and more cabotia puree on top. Finished with mozzarella and put it in the oven for 30 minutes or until the cheese was golden.
