- Extra virgin olive oil to fry the onion and finish the dish1 cup

- Shred the cod in natura, in thin slivers, the size of 4 cm, later, wash the cod in water in a container and changing, squeezing the cod to remove the salt, change the water and "washing the cod", place in clean water for 5 minutes with ice, to remove the rest of the salt. Finally, remove the cod from the water, check if it has desalted and press until all the water is removed. Reserve.
- Cut the onions into 4 parts and then into a moon shape, thin strips. Reserve.
- Chop the parsley very finely. Reserve.
- Chop the black olives into strips. Reserve.
- Chop or crush the garlic. Reserve.
- Put 1 cup of olive oil in the pan and fry the onion until golden, put the garlic after the onion is golden and sauté lightly.
- Put the shredded cod, and sauté for 2 or 3 minutes, just to fry a little. Add the salsa.
- Before adding the straw potato or crispy onion, make sure the cod is very dry, with no liquid at the bottom of the pan.
- Before serving, add the potato straw to incorporate into the cod and mix lightly.
- Assemble the dish with the cod in the center, finish with a drizzle of olive oil, parsley and black olives.
