- Desalted cod, cooked and shredded700 g
- Boiled Potatoes (I cooked them in the cod cooking water until they were very soft)1 kg
- Chopped Onion1 unit(s)
- Squeezed garlic cloves3 unit(s)
- Olive40 g
- Parsley and chives1 tablespoon
- Sour cream200 g
- Gorgonzola cheese to taste
- Black pepper1 coffee spoon
- cream cheese200 g
- Grated Mozzarella100 g
- Grated Parmesan Cheese100 g
- Salt to taste
- In a hot pan, sauté the garlic and onion, covering with plenty of olive oil until the onions are soft
- Add the cod, black pepper, a pinch of salt, olives, parsley and chives. Mix and turn off the heat.
- Add the cream cheese, gorgonzola cheese (very little, because the flavor is strong) mix and reserve
- Make a puree with the boiled potatoes, adding the cream, the gorgonzola cheese and the grated parmesan.
- Grease a refractory with olive oil, line it with a part of the puree
- Stuff with the cod, grated mozzarella and cover with the rest of the puree.
- Finish with grated mozzarella, grated parmesan cheese, a drizzle of olive oil and bake in a preheated oven for approximately 30 minutes until golden.
- Ready!!
