- Preparation mode Pre-cook the cod with the cockroaches and set aside. In a deep pan, add the oil, garlic and onion and sauté. When the onion is translucent, add the tomato, sugar and bay leaves. Mix everything together and cook for another 1-2 minutes, or until the tomato is wilted. Tip: the sugar serves to balance the acidity of the tomato. Add the cod ends and cover with layers of pepper. Add your favorite seasonings and season to taste. Add a glass of water, cover the pan and cook over medium heat for 30 minutes. After 30 minutes, add the pre-cooked potatoes (careful not to break them), the olives and cover for another 10 minutes. Finish with green smell and serve with white rice.
