- Desalted cod fillet600 g
- Boiled Potatoes8 unit(s)
- Boiled egg8 unit(s)
- Sliced Tomato2 unit(s)
- Chopped green olives1 cup
- Lemon Pepper2 tablespoon
- Salt to taste
- Ground black pepper to taste
- Extra virgin olive oil2 cup
- Glass of Coconut Milk1 unit(s)
- Unsweetened Fine Shredded Coconut Packet1/2 unit(s)
- Oregano to taste
- Peel the potatoes and cook until soft, cut into slices and set aside
- Boil the eggs and peel, cut into slices and set aside
- Place the desalted cod pieces in a pan and cover with water, wait for it to boil and remove the cod, cut it into pieces and set aside
- Put half the olive oil in a glass dish and start assembling the codfish: line the bottom with potatoes and season with a little salt and a little lemon pepper and ground black pepper.
- Make a layer of codfish and season with salt, lemon pepper and ground black pepper.
- Place the tomatoes cut into slices, the chopped green olives and the boiled eggs and season with the rest of the olive oil, lemon pepper and ground black pepper.
- Finish with coconut milk, grated coconut and oregano to taste
- Cover with aluminum foil and bake in a preheated oven at 180 degrees for about 30 minutes, remove the foil and bake for another 15 minutes, remove from the oven and mix everything to incorporate the flavor well.
