- clean sardines (preferably buy already flattened)8 unit(s)
- Mimoso cornmeal1 cup
- Lemon juice1 unit(s)
- Salt to taste
- Freshly ground white pepper to taste
- Coriander leaves (optional)10 unit(s)
- Olive oil2 tablespoon
- Season the flattened sardine fillets with salt and freshly ground white pepper. Drizzle with lemon juice and set aside.
- While you leave the fish a little in the seasoning, put the cornmeal on a plate and heat the skillet.
- Drain a little excess lemon juice and pass the fillets directly over the cornmeal, applying light pressure to stick it well to the fish. Do this with 4 files first.
- Drizzle the skillet with 1 tablespoon of oil. Wait 1 minute and put the 4 files to fry. Let it fry well on one side and when it is well golden on the underside, turn it over and leave it for another 2 minutes. Put them to dry on a paper towel. Remove the skillet from the heat and set aside.
- Do the same breading process with the remaining 4 files.
- Remove the excess oil with a paper towel from the skillet, being careful not to burn yourself, and put it back in to heat with the remaining tablespoon of oil.
- Fry the 4 remaining fillets and add them to the others on the paper towel. Serve with fresh coriander and lemon leaves.
