- White fish fillet (I used red snapper, you can also use tilapia)1 kg
- Milk700 ml
- Wheat Flour2 dessert spoon
- Butter3 dessert spoon
- Plantain3 unit(s)
- Salt and black pepper to taste
- Mozzarella cheese150 g
- Season the fish fillets with salt and black pepper, set aside.
- Preheat the oven to 200 degrees. Slice the bananas along their length, in a thickness that is neither too thick nor too thin. Lightly brown the bananas in a frying pan and set aside.
- White sauce: In a pan, add the butter and let it melt. Add the flour and stir for 5 minutes until incorporated (it will turn into a small dough) and lightly browned. Add a small part of the milk (cold) to the pan and mix quickly with a fork to dissolve the flour with butter, all over low heat. Gradually add the rest of the milk until everything is incorporated. Season with salt and pepper. Cook over a very low heat for 15/20 minutes, until it thickens slightly. Turn off the fire.
- Assembly: spread some of the white sauce on the bottom of the platter. Place the fish fillets and the plantain on top. If you don't fit everyone on the platter at once, intersperse. Add all the white sauce and mozzarella cheese on top.
- Take it to bake until gratin.
