- Dogfish Loin200 g
- Salted Granola1/2 cup
- Olive oil to taste
- Sicilian lemon zest to taste
- Salt to taste
- White pepper to taste
- Raw cashews1/2 cup
- Raw Almonds1/2 cup
- Roasted garlic slices1/2 cup
- Black sesame2 tablespoon
- White sesame2 tablespoon
- Fresh rosemary sprigs2 unit(s)
- Salt to taste
- Prepare the granola: Separate the raw cashew nut, raw almond, garlic blade, black sesame, white sesame, rosemary and salt. Preheat the oven to 180 degrees and bake all the ingredients on a baking sheet with the exception of the garlic slices which are roasted separately. Bake in preheated oven for 15 minutes or until all ingredients are crispy. Run in a food processor for a few seconds to achieve a finer texture. Prepare the fish: Pass the granola, olive oil and lemon zest in a food processor. Place the fish in the oven for 5 minutes and then place the crushed granola mixture on top of the fish forming a crust. Place in the oven and remove when the fish is cooked and the crust is golden.
