- Grana Padano cheese100 g
- Sparkling1 cup
- Coarse salt500 g

- Remove the mussels from the shell so they are loose and can be seasoned in a bowl. Season the mussels with salt and black pepper, 3 cloves of minced garlic and the juice of 1 lemon.
- Prepare the sauce: melt the butter in a saucepan and add the grated onion and a pinch of salt. Let the onion brown and add the sparkling wine. Leave it on the fire for a few minutes to eliminate the alcohol from the drink. Then add the fresh cream and let it thicken. Add the cheese and pepper. Sharpen the salt. Let it thicken over medium heat. When finished, if necessary, use a mixer in the pan to make the sauce very smooth.
- Mounting Choose a refractory and line the bottom with coarse salt. Place the open shells over the salt. The salt is used only to firm the mussels in the refractory. Return the mussel flesh to the shells. Cover with the grana padano cheese sauce and grate some cheese on top as well. Bake in the oven for 5 minutes at 200º. Just open the champagne!
