- Salmon Filet with Skin1 kg
- Demerara sugar175 g
- Coarse sea salt250 g
- Brown sugar75 g
- Dill Dill1 cup
- Gin (or other spirit)50 ml
- Coarsely crushed black pepper1 tablespoon
- Mix the salt and sugars with the dil and pepper.
- Line a serving dish with enough plastic wrap to wrap the salmon.
- Place the piece on the film and cover with the seasoning mixture. Wrap all fillets with film. Put some weight on it. It could be a bean bag.
- Place in the fridge for at least 12 hours.
- Drain the liquid, remove excess seasoning, but do not wash. Cut into thin slices and use to stuff whatever you want.
