- Cut the peppers, onion, tomato and cilantro into strips.
- In the pan, sauté the chopped garlic, onion and tomato. Add water and let it boil. Hit the blender and return to the fire, add the coconut milk and more oil.
- Add the tomatoes, onion and peppers in strips, let it boil a little and turn off. Reserve.
- Make regular white rice and add coconut milk at the end and stir. Reserve.
- In a frying pan add oil and place the cubed plantain to grill. Let it brown well.
- Add the grilled plantain to the sauce and add chopped cilantro.
- Plating On the plate, place the rice on one side and the moqueca on the other, finishing with fresh cilantro on top. Enjoy your food!!!
