- Scallops500 g
- Onion1/2 unit(s)
- Tomato without skin and without seeds1 unit(s)
- Red pepper1/4 unit(s)
- Garlic4 unit(s)
- Coconut milk250 ml
- Salt to taste
- Black pepper to taste
- Coriander to taste
- Sazon Goya (seafood)1/2 unit(s)
- Olive oil to taste
- Butter to taste
- In a small pan, sauté the onion in the oil. Drizzle and fry with water. Add the coriander stalks, minced garlic, diced tomato and diced bell pepper. Drizzle and fry. Add coconut milk and seasoning. Let it boil on low heat for about 5 min. Blend in a blender and strain. If you have a lot of liquid, add a teaspoon of xanthan gum. Pat the scallops dry with a paper towel and season with salt and pepper. In a skillet, place butter and a little oil. Grill the scallops for 2 minutes on each side. Serve with the sauce and coriander leaves.
