- Clean Scallops300 g
- Mango1 unit(s)
- Tomato2 unit(s)
- Parsley or cilantro to taste
- Salt and Black Pepper to taste
- Butter1 tablespoon
- Olive oil to taste
- Girl's Finger Pepper (optional) to taste
- Cut the mango into cubes. Remove the tomato core and cut into cubes too. Put in a bowl
- If you want, include a finely chopped girl's finger pepper, without seeds.
- Add the chopped parsley or cilantro, season with lemon, salt and pepper.
- In a skillet over medium heat, add the oil and butter.
- Grill the scallops on both sides until golden, being careful not to overcook. 1 to 2 minutes on each side is enough.
- Serve the scallops with the mango salsa on top. Tip: serve with cassava chips or sweet potato to accompany.
