- Clean the sardines removing the central spine, then remove the spines that are on the belly. Note It's not for cutting, pass the knife lying down and remove the excess of the pimples and put it in salt for 30 minutes
- After 30 minutes wash them well under running water to remove the salt. Place the sardines, sushi vinegar and Mirim tamoe sake in a bowl and leave for 12 hours. The time for the marinade is essential so that it can break all the bones and evaporate the alcohol from the vinegar and sake.
- After the marinade, being careful not to break the sardines, try to remove the skin as much as possible. Make cuts on top of it to cut more pimples. And cut to make your sushi. Grate the ginger and chop the chives and mix with ginger (this mixture in Japanese cuisine is called (NEGUISHOGÁ) ready, just serve and enjoy. Note To make larger quantities of sardines, just multiply all the other ingredients.
