- White rice2 cup
- Peeled Shrimp600 g

- White wine200 ml
- Hot Shrimp Broth1500 ml
- Chopped Parsley5 tablespoon
- Chopped coriander5 tablespoon
- Saffron1 dessert spoon
- Salt to taste
- Black pepper to taste
- Olive oil4 tablespoon
- Heat the oil, and brown the shrimp with just salt and pepper. Reserve.
- Then, in the same pan, sauté the onion and garlic.
- Add the pepper, so that it also sautés.
- Once that's done, put the rice to sauté. Add saffron, salt and tomatoes. Mix well.
- Add the white wine to sauté and extract flavor by deglazing the bottom of the pan.
- You will need to stir the rice every 1 minute, whenever the broth dries, you must add the shrimp broth, one ladle at a time. Until the rice is al dente.
- With the rice on point, place the shrimp, finish with parsley and cilantro. Ready, serve with a mix of greens, or a very light salad.
