- Pumpkin1 kg
- Chopped Onion100 g
- Minced garlic30 g
- Butter2 tablespoon
- Salt to taste
- Water50 ml
- Shrimp fillet500 g
- Black pepper to taste
- Burrata1 unit(s)
- Sanitized arugula150 g
- Olive oil2 dessert spoon
- Season the shrimp and reserve.
- Peel the pumpkin and cut into small cubes.
- Sauté the onion and garlic in butter, add the pumpkin, saute well. Then add the water and cook over low heat until soft.
- Beat the mix until it becomes a smooth puree. Reserve.
- In a skillet, grill the shrimp in olive oil.
- Mounting In a refractory place the hot puree, then the burrata in pieces, the grilled shrimp and finish with fresh arugula.
