- Red bell peppers in medium strips1 unit(s)
- Salt and Pepper to taste
- Extra Virgin Olive Oil to taste
- Water to cook the potatoes to taste
- Peel the potatoes and cut them into medium slices. Place in a pan with water to cook with a pinch of salt, and when they are soft, turn off the heat, drain and reserve.
- While the potatoes cook, season the fish with salt, pepper and other ingredients of your choice (I like to put dehydrated lemon rind in squares that I buy ready-made), and leave to marinate for about 10 minutes.
- Turn on the oven to preheat to about 200 degrees. Wash the peppers, remove the seeds and cut into medium strips.
- Place the fish fillets on a non-stick baking sheet (no need to grease), spread the pepper strips over them, and bake in the oven until golden.
- Serve the fillets on a “walk” of sweet potatoes, with a salad of leaves of your choice, and a generous drizzle of extra virgin olive oil.
