Sea Bass Ceviche with Citrus-Scented Broth and Sweet Potato Chips

  • Sea bass fillet200 g
  • Red Onion in Half Moon50 g
  • Chopped Girl's Finger Pepper5 g
  • Tahiti lemon40 ml
  • Sicilian lemon40 ml
  • Pear orange40 ml
  • Tahiti lemon zest2 g
  • Sicilian lemon zest2 g
  • Chopped coriander3 g
  • Crispy Mexican Corn10 g
  • Sweet potato sliced in slicer50 g
  1. Cut the fish into cubes and marinate in the juices for 15m
  2. Add the red onion , girl's finger pepper , cilantro and zest. Adjust the salt and leave for 5 minutes.
  3. Fry the potato slices in oil over low heat until crispy and dry.
  4. Serve the ceviche with the corn on top and the potatoes on the side.
