- Arborio Rice1 cup
- Smooth white wine1/2 cup
- Butter2 tablespoon
- Vegetable broth1000 ml
- Clean shrimp300 g
- Tomato2 unit(s)
- Onion1 unit(s)
- Grated Parmesan200 g
- Parsley and Chives2 tablespoon
- Olive oil2 tablespoon
- Salt to taste
- In a pan add the oil, sauté the diced tomato and the shrimp, add parsley and chives to taste and reserve.
- Saute the grated onion and rice in butter.
- Add the wine and let it reduce.
- Then add the vegetable stock to cover the rice and stir until dry, repeating the process until al dente.
- Finally, add the shrimp stew and Parmesan cheese and mix.
