- Shrimp1 kg
- Coconut milk500 ml
- Cassava300 g
- Diced Tomatoes1 unit(s)
- Chopped Onion1 unit(s)
- Chopped Pepper1 unit(s)
- Garlic1 unit(s)
- Coriander1 to taste
- Black pepper to taste
- Salt to taste
- Lemon1 unit(s)
- Water500 ml
- Clean the shrimp, removing the head and shell (reserve the heads and shells). Season the fillet with salt, black pepper, lemon juice and garlic. Let it rest.
- Cook the cassava as usual and set aside.
- After washing the heads and shells we will make a broth. In a saucepan add the heads and skins, tomato, onion, coriander and pepper, sauté for 5 minutes in a drizzle of olive oil. Add the water and let it cook for 10 minutes. Let cool! After cold, hit the blender along with the cassava, done that sieve the mixture.
- Fry the shrimp in a drizzle of olive oil, add the mixture of the cassava and the head broth, the coconut milk, let it cook for 10 minutes, always stirring so it doesn't stick to the pan, turn it off and serve warm.
