- Shrimp Carpaccio: 1. Remove the head, tripe, tail and shell of 8 large, fresh prawns (or prawns). Reserve the heads. 2. Place the prawns on a sheet of cling film (parchment paper or pvc film), cover with another sheet and beat with a kitchen hammer or a heavy flat-bottomed skillet until very thin. 3. Transfer to plate and let stand for at least 10 minutes. 4. Heat the extra virgin olive oil, the chopped garlic, the chopped coriander, the juice of half a lemon and the prawn heads. 5. Strain the oil and brush over the carpaccio. 6. Add pink salt, freshly ground pepper, finely chopped tomatoes and finely chopped coriander.
