- Arborio rice200 g
- Dry white wine100 ml
- Vegetable or shrimp broth1 l
- Grated Parmesan100 g
- Cold butter1 teaspoon
- Green smell and salt to taste
- In a pan melt 1 tablespoon of butter, add 1/2 chopped onion and 2 minced garlic cloves and saute
- Add 200g of arboreal rice, sauté well, add 100 ml of dry white wine and stir, then gradually add vegetable broth (1 liter) and stir constantly and whenever the broth is evaporating, add more broth until you reach the cooking point, here I like aldente 😉
- Once cooked, add 100g of grated Parmesan cheese, 1 tablespoon of cold butter and chopped parsley to taste, check the salt and add it if necessary, stir well and set aside.
- In a frying pan, drizzle a drizzle of extra virgin olive oil and grill 200g of prawns, add 1 pinch of salt and add to the risotto, incorporating well and serve immediately! 👩🏼🍳
