Spaghetti with shrimp in arugula sauce

- Pasta250 g
- Arugula (one package)150 g
- Sour cream1 can(s)
- Onion1/4 unit(s)
- Garlic Clove1 unit(s)
- Salt and black pepper to taste
- Parmesan cheese50 g
- Clean the shrimp. Season with salt and pepper and reserve.
- Bring the pasta water (salted) to a boil.
- Chop the onion and garlic.
- Place the arugula leaves for 3 minutes in the boiling pasta water and then remove and place in ice water to slow down the cooking process. Squeeze the leaves to extract as much water as possible. Chop the arugula as much as you can.
- In a skillet, fry the prawns on one side, then turn and fry on the other side, reserve on a plate. In the same skillet, add more fat and sauté the garlic and onion. Add the chopped arugula and the cream and let it incorporate, adjust the seasoning.
- Cook the pasta according to the time on the package (it is advisable to take it out a minute beforehand so that it is al dente).
- Add the grated Parmesan cheese to the sauce, add the cooked and drained pasta, add a ladle of the pasta cooking water and adjust the salt and pepper.
- Now you have two options: add the shrimp to the pasta with sauce or serve it separately, you choose.
