- Medium shrimp, cleaned and peeled1 kg
- medium chopped onion1 unit(s)
- Extra Virgin Olive Oil3 tablespoon
- Culinary butter or margarine1 tablespoon
- Can of Peeled Tomatoes1 unit(s)
- Dry white wine1 cup
- Curry1 tablespoon
- Ginger powder - optional1 teaspoon
- Glass of Coconut Milk200 ml
- Salt to taste
- Parsley for sprinkling - optional to taste
- In a medium or large pan, place 2 tablespoons of oil, the butter and the onion. Sauté until they start to wilt, add the prawns and stir for about 2 minutes, add the white wine (at this point the prawns are flambéed – optional), and as soon as they change color, remove them from the pan and set aside.
- In this same pan, add 1 more tablespoon of oil, the chopped peeled tomato, the other seasonings, the coconut milk, the curry, mix well, lower the heat and let it cook for a few minutes without boiling.
- Add the reserved shrimp to cook in the sauce for a few more minutes over medium heat. Try it, adjust the salt if necessary, sprinkle the chopped parsley and it's ready to be served with white rice.
