- Season the fish with lemon, salt and pepper. Let marinate for 1 hour
- Cook the thickly sliced English potatoes in boiling water for 8 minutes. Transfer to a platter (set aside)
- In a pan, place the peppers, onion and sliced tomato, sauté with 1 tablespoon of olive oil, add the tomato extract with 50 ml of water, let it boil, then add the coconut milk and stir... Turns off.
- Mounting: Place the fish on top of the potatoes, pour the contents of the pan on top, covering them all, place the grated mozzarella and bake for about 30 minutes.
- When removing from the oven, place the potato straw on top and serve!
