- Shoyu1/4 cup
- Orange juice3/4 cup
- Sake1/2 cup
- Olive oil1/4 cup
- Garlic Clove1 unit(s)
- Sicilian Lime (zest) to taste
- Pour soy sauce (¼ cup), orange juice (¾ cup), sake (½ cup), olive oil (¼ cup), 1 clove of garlic and lemon zest
- Boil for 3 minutes, strain, let cool and add toasted sesame oil (2 tbsp)
- Use to marinate tuna loin (500 g) for 12 hours in the fridge
- Brush the piece with olive oil, grill for 2 minutes on each side and slice after 1 hour in the fridge.
