- hydrated black-eyed pea pasta, peeled and crushed1 kg
- Chopped and drained onion100 g
- Salt17 g
- Palm oil1 l
- Place the dough in a container with a high side and with a concave spoon start to aerate the dough. With a rowing motion, pull the air that is inside the container and inject it into the dough, repeat this until it turns white, doubles in volume and is full of air.
- At this point add the chopped onion and mix carefully. Now add the salt and mix gently so as not to remove the air that injected into the dough.
- Heat the palm oil and when it reaches the temperature, flake the acarajés with the help of a metal spoon. Place the dough in the boiling oil and let it fry until the color of the acarajé starts to rise up the sides of the cupcake. Flip and leave until both sides are the same color.
- rest for 2 minutes on absorbent paper, serve with Bahia pepper.
